Philly Steak Sandwich

Serves: 4

Preparation time: 10 minutes

Cooking time: 30 minutes

Ingredients

1 pound beef eye of round

1 large white onion, sliced

1 cup low-sodium beef stock

1 red bell pepper, seeded and julienned

1 green bell pepper, seeded and julienned

8 leaves Bibb lettuce

½ teaspoon sea salt

2 tablespoons grass-fed ghee

Directions

Slice the beef into thin ½-inch strips.

Heat the ghee in a skillet. Add the onions, peppers, and beef strips, and sauté until the beef is browned. Season with salt.

Add broth, and bring to a simmer.

Cover and cook on low for 30 minutes or until water has almost all evaporated.

Scoop the mixture into lettuce leaves, wrap ’em up, and enjoy.
